I have been working in the restaurant industry for 24 years beginning in the kitchen as a dishwasher in rural Pennsylvania working for my older brother. My career progressed in the kitchens as I began to take interest in cooking and becoming a chef. At age 18 I moved to Las Vegas Nevada to further my culinary experience working in the casino restaurants on the Las Vegas strip at restaurants varying from California Pizza Kitchen at the Mirage to Kokomos’s Steaks and Seafood. I continued working on the Las Vegas strip at resorts from the Mirage to Monte Carlo where I worked my way to Sous Chef. In 1997 I began working with a Las Vegas catering company, owned by my partner Tracy, as Executive chef.

I continued to work with the catering company for several years catering medium to large events for Giorgio Armani, Lieutenant Governor Lonnie Hammergrin, many Las Vegas Business men as well as institutional catering for several private schools. I moved from Executive Chef to General Manager for the operation continuing to expand the business until I had the opportunity to become the general partner in a small bar and restaurant in 2000. I assisted my partners in operations of the bar for 4 years at which point I worked a short time for Mandalay Bay as a Beverage Manager. From there I was recruited by Fado Irish Pubs to work in the Las Vegas outlet as a General Manager. I worked in the Las Vegas outlet for 2 years at which point I began to travel with the company and work at several different outlets across the country gaining additional experience in Irish and regional cuisine. In addition to learning about a great deal about Irish and European cuisine I spent several years working closely with all the draught beers Fado is so passionate about, learning much about proper service and beer pairings. After a year of travel I settled in Austin Texas, operating the outlet for an additional 2 years. In 2009 I was offered the opportunity to work with a local Austin company which operated several unique Austin Concepts such as Little Woodrow’s, Uncle Billy’s, Austin Java, and Ski Shores as well as Soleil on Lake Travis. At Soleil I had the opportunity to hone my palate for wine and greatly expanded my overall wine knowledge. Over the past 3 years I worked in each of these concepts operating outlets from each of these unique brands, learning various skills and working with other talented chefs, managers and owners. I have always had a deep passion for cooking and love of the restaurant industry which along with my partner Tracy’s passion for perfection and guest service was the inspiration for Zack’s American Bistro. I bring my passion and drive to every project I am involved with and Zack’s is no different. A chef driven menu utilizing as many local products as possible, making scratch recipes has always been a dream and as Zack’s opens it will be a reality. I am looking forward to bringing my passion for food to the Steiner Ranch residents.
